Pita Pizza

Super easy pizza that’s low in calories and cholesterol
4 large pitas
1 can of petite diced tomatoes
½ of a green pepper sliced
½ of a red pepper sliced
½ of a yellow pepper sliced
½ of a yellow onion sliced
½ cup of shitake mushrooms sliced
8 slices of sandwich size pepperoni
½ cup of low fat mozzarella cheese
Preheat oven to 450 degrees.
In a skillet, add vegetables and cook on medium heat until tender.
Place pitas on a cookie sheet. (2 fit side by side)
Add two slices of pepperoni side by side on each pita.
Spoon enough of the vegetable to cover the pita leaving some of the pita edge showing.
Add a small amount of cheese.
Cook in the oven for 8 minutes.
Do the same for the next two pitas.
